Proof is famous for their croissants and their many different flavors. They only make about 400 a day, I believe. Some of the flavors include: Pocky Strawberry, Black Truffle, Matcha, Raspberry, Ham & Cheese, Lemon Meringue, Almond, Caramel, Plain, Chocolate Mousse…

The space itself is super cute. It kind of looks like a spacious warehouse from the outside with a vary obvious entrance. Once inside, check your temperature, sign in and get a number. There’s only a limit of 6 croissants per customer. They also have coffee beverages and non-coffee beverages available. Once inside, it’s very spacious. There are small alcove like booths in the back and tables else where. It’s an Instagrammer’s haven for photo opportunities. So that’s cute and all, but we know I’m here for the food.





So their croissants are pretty good. Not my most favorite, but I’d still probably continue to try them because they’re so conveniently located to me at the moment. And, I’ve yet to try their plain croissant, which is how I really judge them (how good are they at laminated the layers of pastry dough and butter?). And without all the fancy stuff on and in their croissant, who good is the original? Is it light and crispy yet deliciously buttery? Or is it more dense?



The flavors I’ve tried: raspberry, lemon meringue, ham & cheese, black truffle and almond. And after, literally, popping over to try and get a plain one (I the midst of writing this post) I have a favorite…and I still didn’t get a plain one. I’m skeptical if they make a plain one. The place had only been open for 30 minutes when I went there this morning…there’s no way they sold out (it was also fairly empty inside). So, let’s talk about these croissants and the two drinks I tried.

Ham & Cheese
1. Caramel Pecan – this was absolutely amazing. The pastry was nice and crisp on the outside and the inside was flaky and delicious. It tasted like a caramel pecan pie and wasn’t too heavy.
2. Raspberry – this was pretty. And…it was fine. The inside has a raspberry filling that was a bit on the sugary side and tasted very artificial, it was sweet.
3. Almond – it was nice and crispy, but the almond paste was definitely on the sweet side.
4. Ham & Cheese – it was fine…but it should’ve been warmed up, because warmed or melted cheese is best.
5. Lemon Meringue – the lemon curd is awesome. For me, there was a bit too much meringue and because it was filled with lemon curd, the inside wasn’t exactly light and flaky. The meringue was made well, it was nice and light and airy.
6. Black Truffle – I was curious…and it’s definitely a savory croissant. This one actually has a good amount of black truffle spread. It was delicious. It would’ve been delicious slightly warmed but still good at room temperature.
7. Honey Bee – very lemony, but delicious and refreshing.
8. Vitamin C – I loved this one and super, super refreshing because of the soda.
To wrap it up, my favorites so far: caramel pecan, black truffle, vitamin c.
